I design and decorate every cake by hand, and I want it to look and taste just as beautiful at your party as it did when it left my studio. These are the tips I share with every client at pickup.

The car ride home

  • Keep it flat. The floor of the car or a flat trunk is best. Car seats slope, even when they look level.
  • Keep it cool. Turn on the air conditioning before you load the cake, especially in summer. Heat is the biggest enemy of frosting.
  • Drive gently. Take corners and stops slowly, and go straight to your destination.
  • Carry from the bottom. Hold the box from underneath with both hands, never by the sides.

Storing your cake

Please follow the storage instructions I give you with your order, since they depend on the frosting and filling you chose. As a general rule, cakes with cream cheese frosting, whipped fillings or fruit fillings belong in the refrigerator until shortly before serving. Keep your cake away from direct sunlight, stoves and warm windows.

Serving at its best

Cake tastes best when it isn’t fridge-cold. Taking a refrigerated cake out a little while before serving lets the sponge soften and the flavors come through. Remember to remove any non-edible decorations, supports or toppers before cutting.

Cutting clean slices

  • Use a long, sharp knife.
  • Dip it in hot water and wipe it dry between cuts for neat slices.
  • For a round cake, cutting a smaller circle in the center first makes it easier to get even slices from a large cake.

Leftovers

Cover the cut edges with plastic wrap so the sponge doesn’t dry out, and refrigerate. Leftover slices also freeze well when wrapped tightly.
